A Recipe for Fish with Coconut Sauce

Delicious and nutritious option for the catch of the day.

This is the best time of year to buy fresh salt water fish. You can also go fishing and catch them yourself. The fun part is cooking up what you caught or bought at the supermarket.

Fish can be cooked in many ways. It is considered to be "brain food" and known to boost your memory when eaten frequently. Eating fish is also good for your heart and helps fight cancer.

Here's a delicious fish recipe that I like to make:

Fish with Coconut Sauce

Ingredients

  • 1 pound of flounder, sea bass or any other white fish
  • olive oil
  • 1 chopped onion
  • 4 chopped garlic cloves
  • 1 teaspoon vegetable bullion
  • 1 tablespoon tomato paste
  • 6 potatoes-peeled and chopped
  • 2 bay leaves
  • 1 1/2 cans coconut milk (20 oz.)
  • 2 long hot peppers-remove stems (optional-for extra flavor)
  • 1 chopped tomato
  • salt and pepper
  • 2 limes-juiced  

Directions

1. Use a large frying pan with a cover

2. Put oil in pan to cover bottom

3. Saute onion for 5 minutes

4. Add garlic and cook until softened

5. Next add rest of ingredients listed except fish and lime juice

6. Sprinkle with salt and pepper

7. Bring to a boil and then simmer for 1 hour or longer

8. Add fish and lime juice and cover pan

9. Cook for 20-30 minutes on medium/low until flaky and cooked through

10. Remove bay leaves before serving this meal
